What to Eat at the Azerbaijan Food House

Befitting their position between Europe, the Middle East, and Asia, Azerbaijan’s food house provides a surprisingly delightful fusion of dishes. For my first meal there I decided to try two things, starting with the “gutab,” a dish best described as a thin tortilla filled with a stuffing and then grilled. I chose a mix of meat with cheese & herbs, but both options are available individually. The dish wildly exceeded my expectations-and not just because of the meat! The second item, “kükü,” consists of an omelet with greens. The chef combines freshly chopped greens with eggs, salt, and pepper in a frying pan, thus creating a tasty treat. Served with yogurt on the side, the food proved very filling. I’m not normally an omelet fan, however this dish easily proved the biggest surprise of any meal at the Jamboree so far. Since Azerbaijani food is hard to find outside of the Jamboree (or the Caucasus), I stopped back a second time for lunch the next day. Thanks to the heat, I decided to try the Doghramach soup, a combination of milk, chopped cucumber, and greens. For some substance I selected the “khangal” baklava-style meat dish and enjoyed a refreshing “sharbat” to wash it all down. Doghramach soup was served cold, and that alone made it a delightful surprise. The cucumber nicely complements the milk, while the greens add texture to the soup. The second dish, khangal, seemed slightly similar to the gutab in name, however the dishes were completely different in presentation. Served in a bowl as thin bread covered in meat and yogurt, the khangal proved filling enough to be a meal in its own right! A nice cup of sharbat, or boiled sugar water with lemon and saffron, helped to finish the meal. All the Azerbaijani food tasted amazing. If I had to rank the dishes though, I would probably place them in the following order: Gutab (Looks great, and tastes even better) Kükü (I’m looking this up when I get home) Khangal (A great pairing with the Doghramach Soup) Doghramach Soup (plenty of liquid for lunch during the day) Don’t take my word for it though; head down to the Azerbaijan Food House with a friend and start sampling for yourself!
